Our hand-picked olives are taken to a state of art mill within 24 hours. The modern milling process sometimes referred to as 'cold pressing' keeps the temperature of the olive paste below 27 °C. This preserves and maximizes the aromas, flavors, and beneficial nutrients of the oil.
