Artichoke Feta Cheese Dip

It is the artıchoke season, here is a delicious way of adding artichoke to your diet... 

Ingredients:

  • 2 large artichoke hearts boiled
  • 3 tbs greek yogurt
  • 2 tsp feta cheese
  • 1 tsp lemon juice
  • 1 tbs fresh parsley
  • 2 tbs Colive Extra Virgin Olive Oil (more if you fancy!)
  • pinch of salt
  • pinch of black pepper
  • pinch of crushed red pepper 

Method:

  1. Chop the artichoke hearts and put the pieces in a bowl
  2. Mix in the greek yogurt, feta cheese, lemon juice and pinch of black pepper and salt
  3. Use a hand blender to make it a smooth paste
  4. Transfer it to your serving bowl  ( Your limited edition Colive bowl would be perfect for serving!)
  5. Add the pinch of crushed red pepper, parsley leaves, drizzle with Colive oil
