Artichoke Feta Cheese Dip
It is the artıchoke season, here is a delicious way of adding artichoke to your diet...
Ingredients:
- 2 large artichoke hearts boiled
- 3 tbs greek yogurt
- 2 tsp feta cheese
- 1 tsp lemon juice
- 1 tbs fresh parsley
- 2 tbs Colive Extra Virgin Olive Oil (more if you fancy!)
- pinch of salt
- pinch of black pepper
- pinch of crushed red pepper
Method:
- Chop the artichoke hearts and put the pieces in a bowl
- Mix in the greek yogurt, feta cheese, lemon juice and pinch of black pepper and salt
- Use a hand blender to make it a smooth paste
- Transfer it to your serving bowl ( Your limited edition Colive bowl would be perfect for serving!)
- Add the pinch of crushed red pepper, parsley leaves, drizzle with Colive oil
