Mousse filled Chicken with Herb Potatoes
Ingredients
- Colive Extra Virgin Olive Oil
- Garlic
- Salt & Pepper
- Parsley
- Thyme
- Rosemary
- Breadcrumbs
- Mango
- Lime juice and zest
- Honey
- Star Anise
- Chicken breast
- Dates
- Dry Goji berries
Method
Herb Potatoes
1. Bake potatoes in the oven for 40-45 minutes at 200 Celsius
2. Chop fresh parsley when it is out of the oven
Herb Crust
1. Blend all ingredients till it has a nice liquid form
2. Pour the ingredients mix with Colive oil for the finish
Mango Sauce
1. Cook a mango with a dash of water and star anise in a pan
2. Remove star anise and blend it with honey
3. Turn off the heat, and mix in lime juice, lime zest, and fresh thyme
Chicken Mousse
1. Slice chicken to form that it can be rolled
2. Put on aluminum foil and pour the chicken mousse on top
3. To cook put in the freezer for 20 minutes, then boil in water with foil for minutes
4. Remove the foil and apply herb crust mix
5. Put in the oven for 8 minutes at 200 Celsius
