Guest Recipe: Zars Kitchen's Roasted Tomato Tart

Ingredients
Makes large 14” tart to feed 8
- 700g mixed colour tomatoes, sliced thick
- 750g ricotta
- 4 eggs
- 1/2 lemon juiced
- Garlic powder, chili flakes, salt, pepper to taste
- 250g wholemeal flour
- 250g plain flour
- 1 tbsp fine sea salt
- 2 tsp dried thyme
- 1/2 cup Colive Extra Virgin Olive Oil
- 1 cup water
- 2 cups basil leaves packed
- 1/2 cup freshly grated parmesan
- 1/2 cup toasted pine nuts
- 1/2 cup Colive Extra Virgin Olive Oil
- 6 garlic cloves minced
- 1 tsp salt
- 1/2 tsp pepper
Method:
- Lay sliced tomatoes in a single layer on a kitchen towel, salt to drain out excess water.
- Pre-heat oven to 180°C.
- Make pesto - Blitz basil and pine nuts in a food processor, add garlic and parmesan, blitz again, gradually add olive oil
- Then add salt and pepper to taste, set aside
- Make base - grease 14” tart dish
- Add all ingredients to bowl and mix with a fork until combined
- Transfer the dough to a flat surface and knead lightly until the dough forms a ball shape
- Roll out into a 15” circle, carefully place in your pie dish and refrigerate for 30 mins
- Prick the base all over with a fork and bake in the oven for 15 mins, set aside
- Blitz the ricotta until whipped, add pesto (reserve a few tbsp to dot on top), lemon juice
- Taste and add salt, pepper, garlic powder and chili flakes as desired
- Add eggs and blitz until combined
- Pour pesto ricotta into the tart base and bake for a further 20-25 minutes until set
- Remove from the oven and add the sliced tomatoes, dot with pesto and bake a further 20 minutes until the crust is cooked through and golden and the tomatoes are semi roasted
